Christian Ryan – Chef/Owner
Aloft’s kitchen is run by Christian Ryan and Glenn Byrnes, who worked together at Melbourne’s Taxi Dining Room. Christian went on to work internationally for Gordon Ramsay as part of the team that reopened the prestigious Savoy Grill. Since returning to Tasmania, he’s worked at The Source at Mona and as Head Chef at Property: of Pilgrim.
Glenn Byrnes – Chef
As well as his role as Taxi Dining Room’s head chef, Glenn has worked in Melbourne’s famed Vue De Monde and Rockpool Bar & Grill. After making a sea change to Tasmania, Glenn joined the team at the now-closed Garagistes, before opening the short-lived but popular pop-up restaurant Self Preservation Society.
Heiki Stanley – Maître d’/Owner
After six years working in almost every department at Mona, Heiki left to take up the role of floor manager at Property: of Pilgrim alongside her partner Christian Ryan. She now heads Aloft’s front-of-house team.
Madeleine Paske – Restaurant Manager
Madeleine spent the past four years honing her hospitality skills at Mona’s fine-dining restaurant The Source. She’s passionate about providing an exceptional dining experience.
Alice Chugg – Sommelier
Alice was a finalist in the 2014 Appetite for Excellence Australian Young Waiter award. She brings her talent to Aloft after five years as sommelier at Ethos Eat Drink.
