Christian Ryan – Chef/Owner

Aloft’s kitchen is run by Tasmanian born and bred Christian Ryan who started his career in Hobart then moved to Melbourne to work at Taxi Dining Room. Christian went on to work internationally for Gordon Ramsay as part of the team that reopened the prestigious Savoy Grill. Since returning to Tasmania, he’s worked at The Source at Mona and as Head Chef at Property: of Pilgrim.

Heiki Stanley – Maître d’/Owner

After six years working in almost every department at Mona, Heiki left to take up the role of floor manager at Property: of Pilgrim alongside Christian Ryan. She now heads Aloft’s front-of-house managing Media and Accounts.

Madeleine Paske – Restaurant Manager

Madeleine spent the past four years honing her hospitality skills at Mona’s fine-dining restaurant The Source. She’s passionate about providing an exceptional dining experience.

Vicki Brewer – Sommelier

Vicki joins the Aloft team from Melbourne having worked as a Sommelier at Taxi Dining Room, Rockpool Bar and Grill, Woodland House, Smalls Wine Bar and Park St Dining. Bringing with her a wealth of knowledge through completion of WSET 3 and WSET 4 Diploma, and time spent in London, Scotland, Italy, France, Portugal and Spain visiting distilleries and wineries.
